Well, since we weren't there to witness how this was carried out, it's hard to tell. Has the cat bitten anyone before? Is it usually a calm, agreeable cat or does it have the reputation for being "jumpy" and/or aggressive? Did your wife come up to the cat from behind and startle it? Is the cat exhibiting any other behaviors that might indicate it's not feeling well? Does the cat "like" your wife or is it more attached to you? Has your wife ever yelled at or otherwise disciplined the cat that would make the cat fearful of her? If you can repost with more information, we'll try to help you figure out why ths happened.

How old is your cat? Has it had all its shots? A particularly spunky kitten or a senile cat can do weird things, but this is not normal behavior. Consult with your vet. And go to the hospital--cat bites are puncture wounds and cat mouths are notorious for harboring nasty bacteria.
